Jabiru is a washed coffee of SHB EP category from the municipality of Union Cantinil, located in the department of Huehuetenango, Guatemala. We work with a number of small producers in the region, with farms averaging 1.5 hectares in size, who contribute to this batch. The varieties harvested include Bourbon, Caturra, Typica, and Catuaí, while the growing altitude is 1,500 to 1,800 meters above sea level.
Our micro-warehouse in Unión Cantinil is located in the heart of the municipality and receives coffee from a small radius of about 15 km. This high-altitude region has some of the best coffee in Huehuetenango. The generally north-facing aspect of the mountains means that the sun takes longer to reach the small plots where the coffee is grown. Although there is some Catimor planting in the region, the common varieties are more traditional and conducive to a high-quality cup, such as Bourbons, Calopsitas, and Paches.
Huehuetenango is both a large department (or state) and the namesake capital of that same department. Although coffee is not grown in the city of Huehuetenango, it is abundant in the high-altitude mountains west and north of the city. The producers are predominantly small farmers with about 1 hectare of land. In order to buy coffee directly from these groups of small farmers, we have installed a series of regional micro-warehouses and purchasing stations. This has allowed us to receive coffee directly from the small producers and reduce transportation and logistics costs for them, while simultaneously providing stable market access for these remote communities.
