This coffee comes from the Poços de Caldas region, where the city is located inside a 'Caldera', which is an extinct super volcano. Around the city, located on the slopes of the Caldeira, there are many farms that range from 1000 to 1300 meters in altitude. The highest peak in the area is located at 1686 meters above sea level and is called Serra de São Domingos. The rich soil and altitude of the region make it a perfect environment for the production of specialty coffee.

This coffee is a blend of farms that was curated for a profile by the Bourbon Specialty Coffees team who have been working in Poços de Caldas since 2000. Since then, they have worked with the region's producers to slow down the processing process and improve quality.

This coffee is a blend of natural coffee (80%) and honey (20%) that Bourbon Specialty found to create balance and harmony for the profile.
