Patricio Rubio is a member of the Lima Coffees cooperative and has a 6.25 hectare farm where he cultivates 3.5 hectares of Caturra coffee. It has around 11,500 trees in total. The coffee is harvested ripe and pulped on the same day or the next day, depending on the time it is delivered to the wet mill. It is fermented dry for 24 hours before being washed three times. It is dried in shaded courtyards, and drying takes about 20 days

Peruvian Coffees
Although coffee arrived in Peru relatively early - in the mid-1700s - it was not cultivated for commercial export until nearly the 20th century, as demand from Europe increased and coffee production in Indonesia decreased significantly. In the early 1900s, the British government took possession of about 2 million hectares of land from the Peruvian government as payment for a defaulted loan, and much of this land became British-owned coffee plantations.
The country has a notable number of certified organic coffees, as well as Fair Trade, Rainforest Alliance and UTZ certified coffees.
Peru is the largest exporter of organic Arabica coffee globally. With extremely high altitudes and fertile soils, the country's small farmers also produce some impressive specialty coffees.
As of the 2010s, Peru is a leading producer of Arabica coffee, often ranked fifth in global production and export of Arabica.
